Some folks are unaware that Colorado also has casino gambling. Back in the 90's three old mining towns in the mountains were allowed to offer limited stakes gambling(slots, BJ,5$max) in order to stave off extinction. In July of 2009, rules were liberalized to include craps, roulette, and a 100$ max bet limit. Here is a brief review of Craps in Cripple Creek.
Cripple Creek is about an hour west of Colorado Springs, on the backside of Pikes Peak. Shuttle Buses run hourly between the two towns. Some the scenery on the way is spectacular. Stepping off the bus on Bennet Ave in CC is like a time warp. All the buildings date to the heydays of the 1890's gold rush when Cripple Creek was Colorado's second largest city. Even the new properties, the Double Eagle Hotel and the Wildwood Casino were built to retain the 1890s look. The parking garage at the Wildwood resembles an ore crushing mill. Pretty clever!
Craps varies wildly from place to place in town. I liked the vibe at the Brass Ass Casino; only 3/4/5 odds but a very competent crew featuring the tallest stickman I've ever seen(at least 6ft10' with a voice like a foghorn). Brick interior walls, raw wood floors, good lighting, quick cocktail service and actual outside windows, you can see the snow falling on Bennet Ave!
One dollar minimums means they keep 50&25 cent chips on hand for the smaller bettors. Downtown odds on the field.
The crew at Womack's Gambling Hall was awful, stay away.
The Wildwood is a new building with 2 tables and decent dealers. 10x odds, downtown odds in the field, 5$ minimum. Enclosed parking means you don't freeze before getting to the tables. Two decent restaurants at the Wildwood, but nobody goes to Cripple Creek for a meal.
With 100$ limits on any one bet, there's plenty of leeway for crapsshooters, so if the Jones gets too bad it's an easy trip into the hills. Other offerings are slots, VP, Poker and roulette.
The other mountain towns, Blackhawk and Central City, are an hour from Denver on I-70. Ameristar just opened a BIG new place in Blackhawk.

The free odds aren't considered part of the max bet, no?

From what I understand It sounds like the max bet is the max pass line, field, etc with odds on top.

I've been to Blackhawk. $100 is the max single bet, and that includes odds bets. So you can make a $100 pass line bet, but the odds are limited to $100.

So, ideally it would be best to play $20/$100 odds on the 6 or 8 then, or lay $120 to win $100 on a don't.

Ameristar offered 3x-4x-5x odds last time I was there, (September 2009) while Isle of Capri offered 10x odds. I was there 4th of July weekend in 2009. The new rules were effective July 2, 2009. Ameristar posted 3-4-5 odds on the table, but players (including myself) were putting much more behind their flat bets and the crew paid them. Most of the dealers had never dealt craps before, although each crew typically had one person of the 4 who had. They imported experienced dealers from other locations just for the opening weekend. But for the most part it was pretty disorganized and there were a lot of bets paid wrong.

As I said , crew competence can vary wildly from place to place. I watched the crew at the Brass Ass handle PL, DP, place and a boatload of different props very smoothly. I'd venture to say that after being open for 5 or 6 months, the Ameristar operation has tightened up their act. I didn't mention the Gold Creek casino in my original post. They offer 100x odds and a good crew.

Do they offer $1 Pass line bets? Wouldn't that be the only way 100x would mean anything?

Yes, the table minmum at the Gold Creek is one dollar.
